Nancy’s Cheesy Skillet Dish

Great for Brunch or Dinner!

 

· 2 T Butter

· 1 Onion, chopped

· 1 Bell Pepper, chopped

· 5 slices Bread, cubed

· 1 Bunch Spinach, chopped

· 6 Eggs

· 1 1/2 C Milk

· 1 tsp Salt

· 1/4 tsp Pepper

· 1 1/2 C Swiss Cheese Shredded

· 1 Tomato, chopped

In large cast iron skillet, cook onion & pepper in butter until tender. Add bread and cook until slightly browned. Add spinach cooking until wilted. In separate bowl, mix eggs, milk, salt & pepper and cheese. Pour in skillet and cover on medium heat for 10 minutes or until eggs are set. Remove cover, sprinkle with remain cheese and put in oven on broil for 2 minutes or until cheese is bubbly. Remove from oven and sprinkle with tomatoes.
